-try not to ball like a baby when he does this

4. Goodbye party with his MPD friends

Last week my mom and I went to Publix to pick up a few items. Publix is a genius because the first department you enter is their bakery, filled with amazing goodies.

After being good and denying the devil his dessert, we came across the section where they make a recipe and give you samples. The recipe was "Cheesy Seafood Gratin with parmesean green beans". I was too busy scoring $1 liter bottles of Smart Water when my mom got a sample of the dish of the day. She ate it and went on and on about how good it was. Of course, when I went to get a sample they were all out. Boo.

For Valentine's, my mom decided to make the dish. It was probably the most delicous thing I've eaten in a long time.

Here's the recipe....seriously, try it!

Cheesy Seafood Gratin

It says it makes 4 servings, but in my opinion, it makes more than that. We had 3 adults eat it and I took 2 plates to work ( one for my asst) and we still have quite a lot left.

It's a love story....

and I'm glad I said yes! (Corny...I know!)

Happy Valentine's day y'all!!!

1. How long have you & your significant other been together?

Since October 10, 2002

2. How did you meet? {What's your love story?}

My friend was dating his friend. B just arrived home from being stationed in Japan and wanted a "FRIEND" to hang out with during the month he was home on leave. Well, my friend asked me to call B. I did. We talked FOREVER. We met and literally hit it off from the start. What ever happened to just wanting a friend to hang out with, I'm not sure! ha!!

We've survived: long distances 2x's (CA -TN, & Memphis- Nashville), war, illness, and a ton of other crazy things!

3. If married, how long have you been married?

3 years 10 months (April 12 it will be 4 years)

4. If you are married, where did you get married? Big or small wedding?

Holy Rosary Catholic Church; 150ish people

-the same church my parents were married in 30+ years ago!

5. Do you have any nick-names that you call one another?

I call him B, B Bop, Ba, Benjamin Franklin and really whatever pops in my head!! He pretty much answers to anything...ha!

He calls me Babe or Ba mostly.

(He accidentally typed Ba instead of Babe in an email when we were dating, so it just stuck)

6. Name 3 things you love most about your honey.

1. He's a wonderful man and I'm beyond the moon excited to have a son with him! I know he's going to be an amazing father. I just hope our son is half as great.

2. He is hard-working and sacrifices a lot for our family. I doubt most men established in their career would start from scratch again, in order to "allow" (for lack of better term) their wife to pursue a great opportunity.

3. He makes me laugh like nobody else. We have so many inside jokes and we totally have a blast together.

7. Tell us how he proposed?

July 5, 2007:

We went for a walk (me, B and our Dixie). Half way through the walk, he stopped (I kept going) and said "Hey babe..." I figured he was just waiting on Dix to do her thing, so imagine my surprise when I turned around and he was on one knee (Dix proudly sitting next to him)!! He said "Emily Katherine.....sweeeet things.....will you marry me?" I of course said YES!!  I loved how he included our dog too!

He had asked my parents for their permission the week prior!

8. Is he a flowers and teddy bear kind of guy for v-day or strawberries, champagne, & rose petals?

He'll bring flowers for no reason! We don't normally do a lot for Valentine's (he shocked me last year with roses), and I'm okay with that!

9. Are you a sunset dinner on the beach kind of girl, or pop in a movie and relax on the couch?

Relaxing on the couch, low key type gal!

10. Tell us one thing you'd like to do with your significant other one day. If you could do anything or go anywhere?

Travel to Europe!

11. Tell us what you plan on doing this Valentine's Day.

work and talk to each other on the phone!
(being 200 miles away puts a damper on plans!)

12. Are you asking for anything this Valentine's Day?

I specifically asked him NOT to get me anything. We have so much coming up and I did not want him to spend $70 on some flowers that are just going to die. I'm way to practical in my old age...ha!

13. Give us one piece of advice for keeping a relationship strong & full of love.

Don't take yourself too seriously....laugh.

14. Show us a picture of what love means to you...
making me him!

Oh Happy Day!!

Ben received the word last week that he is OFFICIALLY hired with Nashville!!!

He starts March 1st and we cannot be happier!! I'm of course thrilled that we will finally be a family again!
I'm over doing the long distance thing quite frankly. B said too soak up this last week and half of "freedom"...ha!

Now....time to finish getting the "new" house ready and our Memphis house packed. For some reason, I'm not thinking moving at 34 weeks is going to be fun.

Jack Attack: 32 weeks

ignore my tired face (and I did wear a sweater over that tank today!)

How big is he?:  roughly 3.5+ pounds

Gender: BOY oh boy!!

Maternity clothes?: Yes, most of my normal shirts still fit but maternity ones are way more comfy!!

Weight Gain: probably 17ish pounds (I'll find out on Mon at my appt)

Symptoms: pain in the right side of my back/ribs, heartburn, sore legs & hips, and now the top of my fundus (learned that term in my class!) is burning.

Belly or out?:  1/2 out!

Sleep:  not too good

Stretch marks?: None. {Knocks on wood.}

Cravings:  Kit-kats and last night I saw the Zaxbys commerical and literally HAD to have some for lunch today.

Movement:  oh yeah....he definitely has a pattern though.

Best moment this week:  Going to our first child birth class! It really made this whole process real.

1. In my "snack" drawer at work I have a box of Special K protein bars and a bag of Valentine Kit- Kat/Reeses cups. Something might be wrong with this equation!

2. I brought my heating pad to work with me. I feel like an old lady having to use one but at this stage I don't care!

3. I've temporarily misplaced my tennis shoes. Therefore, I cannot go to the gym to walk....right?

4. I still haven't purchased a crib mattress. I wanted to this weekend, but forgot.  Mother of the year goes to me!!

what's on your mind this Wednesday? Link up over at E's!

food truck fun!

I've been bit by the food truck bug. Ever since moving back to Nashville, I've been hearing more and more about the local trucks. I've really wanted to try a few but the hours they are open didnt work for my work schedule.

I came upon a food truck festival type thing happening on weekends in February and decided to try it this past Saturday. It was raining so only 2 trucks were there, but we still decided to go.

I chose the Rollin' Smokin' truck which offered different smoked meats (in either taco or sandwich). I got the brisket sandwich and mac-n-cheese! YUM.

Ben chose the Yayos OMG Mexican truck. He got three tacos and said they were good.

I cannot wait to try the other local trucks.

Labor of Love

B and I had our first "expectant parent" class Saturday! It really made the whole upcoming child birth thing a lot more real, which is good since this little guy will be coming in less than 2 months!

It was a small class (only 6 couples) and surprisingly very laid back and at ease. This week we talked about the different stages of the birthing process, warning signs, when to go to the hospital, inducing/sections,  a bit about relaxation techniques and other things.

We began our session with the "not-so-fun" things about pregnancy. My #1 was heartburn. I've had it since day one and it's not fun. Anyways, the RN mentioned that another not fun thing about pregnancy is nasal congestion. She asked if anyone experienced that symptom and MY HUSBAND raised his hand! The whole room laughed and I joked he was  having sympathy symptoms!! Man...can't take him anywhere! :-)

About half way through, she sent the men to another room and we had to answer questions separately. We had three questions (best thing about pg, worst thing and biggest fears). The girls took the full 10 minutes and answered each question fully. We had a long list. The men appparently took all of 3 minutes to answer the questions and then (according to B) talk about the football game and other men things. At least they answered the questions, I guess!
getting the pregnancy experience!
After our discussion, we watched the birthing video. Thankfully none of the men passed out! It was quite informative and not as corny as it could've been.

We went on a tour of the L&D floor and of the lactation boutique and then back to the room for relaxation techniques. We were required to bring a tennis ball, blanket and pillow. We listened to music and got to lie down while our husbands massaged our backs. Um...awesome! I did not want to get back up!

We have another class this weekend to learn about baby stuff. I can't wait!

decisions decisions

I'm a researcher and always have been. As soon as something comes up (trip, life event etc), I begin researching andr researching.

I've been doing my homework on car seats/strollers. I asked several friends and a majority recommended the Chicco Key Fit 30.

Ben and I went to BRU to look at the KF30 and we both liked it. The KF 30 is rated up to 30llbs. The particular pattern we liked does not come in the "travel system" deal. Of course that means you have to buy the car seat and stroller separate. Cha-ching.

My mom saw the Target ad this week and it featured a Key Fit Travel System. The only catch is that it's the regular Key Fit which is only rated for 22llbs.'s like $100 less than the other at BRU and is the whole system., my inexperience self is debating between the two. Is 8llbs really worth $100 more dollars? How long will it take J to be 22llbs anyways?! (lets just hope he's not a 14llb newborn like that poor mother in Iowa!)

I really wish this whole baby thing came with a manual. I just don't want to get the wrong things and mess up my first born (well, too bad)!
